We tried the vegetarian tamales everywhere else we've found them, and always ran into one of two problems.
- They were really bland and flavorless.
- Despite being described as "vegetarian", animal fat / broth was used to make the masa.
Ever since moving away from Dos Hermanos, we've been making our own Tamales, slowly perfecting the recipe. I'm happy to report, I am currently eating the best damn tamales I have ever had. Molé-Tofu-Green-Chili-Cheese tamales, in the best damn masa I've ever had, too. I've never even had chicken- or pork-tainted masa this good. These kick the best Dos Hermanos tamale ass a thousand miles and back, no disrespect intended.
Nummy, nummy. Few things in life are this worth 4 hours in the kitchen.

I didn't know you could use moles in cooking. Wouldn't the "mole" part make it non-vegetarian? ;)
I love eating animals. They taste so good! I never want to limit myself to plants alone. I think I am even getting some chickens soon I can eat them! I would eat you as well if I they would let me. No not like that! Not for all the tofu in places that have a lot of tofu.
I believe moles are not technically animals, like lobster or shrimp or citizens of Milwaukee.
Wait I can eat people from Milwaukee?
Not only can you eat them, but you can eat them even if you are vegetarian.
Wait, I thought eating folks from Milwaukee was a privilege reserved for vegetarians. If I'd a known just anyone could do that, I'd have passed.

Mole (also spelled Molé) is a rich smoky spicy chocolatey sauce used in Mexican cooking. Its damn good.
From Wikipedia:
"Mole poblano is prepared with dried chili peppers (commonly ancho, pasilla, mulato and chipotle), ground nuts and/or seeds (almonds, indigenous peanuts, and/or sesame seeds), spices, Mexican chocolate (cacao ground with sugar and cinnamon and occasionally nuts), salt, and a variety of other ingredients including charred avocado leaves, onions, and garlic. Dried seasonings such as ground oregano are also used. In order to provide a rich thickness to the sauce, bread crumbs or crackers are added to the mix."
Trust me, it's much better than the ingredient list sounds.
I imagine Molé goes good on Milwaukeegans, but I've never tried.
I thought Milwaukeegans ate people, not the other way 'round.
Milwaukeegans eat Milwaukeegans. I'm sure glad I work with Milwaukiegans and not Milwaukeegans.
